Blackened Season

2 cups Paprika
1 cup salt
1/2 cup +2tb  Onion Powder
1/2 cup +2tb  Garlic Powder
1/2 cup +2tb Cayenne 
1/2 cup Ground white pepper
1/2 cup Ground black pepper
1/4 cup Dried Tyme
1/4 cup Dried Oregano
(heat grill to 500+ with griddle on grill. dip fish in melted butter, sprinkle seasoning on fish, burn on grill for 1-2 min each side)

Sweet Italian Sausage - 10 lbs7 lbs of deer meat 3 lbs Bacon Ends (Red box at HEB)

  • 2 tablespoon salt

  • 2 tablespoon sugar

  • 1 tablespoon garlic powder

  • 1 tablespoon fennel seed

  • 1 tablespoon lemon pepper

  • 1 tablespoon paprika

  • 2 tspoon celery salt

  • 2 tspoon sage

  • 1 tspoon cayenne pepper

  • 1/3 cup soy sauce

  • 1 tablespoon worchestershire sauce

Jimmy Dean Sage Breakfast Sausage 10 lbs 7 lbs deer 3 lbs bacon ends (red box at HEB)

4 table spoon salt
2 table spoon parsley
1 table spoon sage
1 table spoon black pepper
1 table spoon thyme
1 table spoon red pepper
1 table spoon coriander
1 table spoon sugar


Smoke Rub

1 cup paprika
1/3 cup Onion Powder
1/8 teaspoon Cayenne
1/2 teaspoon white pepper
2 teaspoon dark chili powder
3 tablespoons brown sugar 
1/2 cup granulated garlic 
1 teaspoon curry
1/2 teaspoon black pepper
1/4 cup kosher salt

(coat backstrap, heat grill to low heat, cook ~ 10min each side, slice and enjoy)

 

Ceviche recipe

I don’t have measurements for anything. I just guesstimate it.

-dice up and mix together fish (I have yet to try a type of fish that didn’t work), 1 onion, 2 jalapeno, 2 tomato, and cilantro

-add the juice from 3 lemons and 3 limes (you want a lot of juice in it)

- I usually add a little salt and, if it’s handy, a little comino (aka cumin)

- let it sit for at least one hour (it keeps getting better with time)

- serve with crackers or chips

 

Cinnamon Rolls (I learned from my grandmother - Lorena McConnell)

  • 2 boxes of Hot Roll Mix

  • Cinnamon

  • White sugar

  • Brown sugar,

  • Walnuts,

  • Raisins

  • Powder sugar

  • 2 sticks butter

  • Make roll mix per instructions, place in large bowl or split up

  • Let roll mix raise for a couple hours in a warm location

  • Roll out dough in long rectangle so it is 12" by 36" or so

  • Melt butter and pour/spread over dough

  • Sprinkle Cinnamon, sugar, brown sugar, walnuts, raisins to your taste

  • Roll up dough and slice about 1.5" thick

  • Place in cooking dish (butter dish for no stick) and let rise for a couple hours in warm place. Cover so they don't dry out.

  • Cook per Hot Roll mix instructions. ~20-22 minutes

  • Make icing per instructions on powder sugar box and drizzle on rolls after they cool down
