Blackened Seasoning

2 cups paprika
1 cup salt
1/2 cup + 2 tbsp onion powder
1/2 cup + 2 tbsp garlic powder
1/2 cup + 2 tbsp cayenne
1/2 cup ground white pepper
1/2 cup ground black pepper
1/4 cup dried thyme
1/4 cup dried oregano
Heat grill to 500+ with griddle on the grill. Dip fish in melted butter, sprinkle seasoning on the fish, and sear about 1–2 minutes per side.

- 1 tablespoon Worcestershire sauce

Smoke Rub

1/3 cup onion powder
1/8 teaspoon cayenne

2 teaspoons dark chili powder
3 tablespoons brown sugar
1/2 cup granulated garlic
1 teaspoon curry
1/2 teaspoon black pepper
1/4 cup kosher salt
Coat backstrap, heat grill to low heat, cook about 10 minutes per side, then slice and serve.
Ceviche
Fresh Fish • Citrus • Easy Prep
I don’t use exact measurements for this one. I just guesstimate it.
- Dice and mix together fish, 1 onion, 2 jalapeños, 2 tomatoes, and cilantro
- Add the juice from 3 lemons and 3 limes
- Add a little salt and a little cumin if you like
- Let it sit for at least one hour
- Serve with crackers or chips
Cinnamon Rolls

- 2 boxes of Hot Roll Mix
- Cinnamon
- White sugar
- Brown sugar
- Walnuts
- Raisins
- Powdered sugar
- 2 sticks butter
- Make roll mix per instructions and place in a large bowl
- Let dough rise a couple hours in a warm place
- Roll into a long rectangle about 12" x 36"
- Spread melted butter over the dough
- Sprinkle cinnamon, white sugar, brown sugar, walnuts, and raisins to taste
- Roll up dough and slice about 1.5" thick
- Place in a buttered dish and let rise again
- Bake per Hot Roll Mix directions, about 20–22 minutes
- Drizzle icing on after the rolls cool down
